tacos

the idea here is to make flavorful tacos from fresh ingredients. no more “taco seasoning” for you, baby.

what you need:

filling

  • 1 lime
  • 1 tbs cumin
  • .5 tbs chili powder
  • 1 tsp cayenne pepper
  • .5 cup plain yogurt
  • 1 medium onion (red or sweet), finely diced
  • 2 cloves garlic
  • 1 lb of ground meat
  • hard taco shells

garnish

  • iceberg lettuce, shredded
  • shredded cheese
  • fresh tomatoes, cubed

what you do:

  1. put taco shells on a cookie sheet, face down (upside down U)
  2. place in oven at 300F while you make the filling
  3. cook your ground meat in a large pan on the stove
  4. drain any excess grease
  5. add crushed garlic, onions, and spices
  6. zest the lime into the mix
  7. cut the lime in half and squeeze both halves into the mix
  8. cook until the onions are translucent
  9. reduce heat, add yogurt
  10. fill taco shells with cheese, filling, lettuce, and tomatoes
  11. serve with rice or potatoes
