acorn squash & chili

what you need:

  • 1 acorn squash (2x size of grapefruit to serve 2)
  • cinnamon
  • about 1 tbs butter
  • nutmeg
  • allspice
  • red bean chili (hormel hot chili in a can, unless you can find a healthier option. perhaps pinto beans and chili powder??)
  • sharp cheddar, shredded

what you do:

  1. preheat oven to 400F
  2. cover a glass baking dish in foil. lube it up with pam or something. add 1/2 inch water.
  3. cut the acorn squash in half and scoop out the seeds and stringers.
  4. make tiny piercings all over the outside of the squash
  5. coat the inside of the squash halves with butter
  6. sprinkle about 1 tsp cinnamon in each half of the squash
  7. sprinkle about 1/4 tsp allspice in each half
  8. sprinkle (or freshly grate) about 1/8 tsp nutmeg in each half
  9. place squash halves in baking dish
  10. fill (but don’t overfill) the squash with chili
  11. top with cheese
  12. bake uncovered for about 1.5 hours or until the squash feels soft
  13. enjoy with warm sourdough bread
