cormbread con veggibons

what you need

  • 1 7×10 baking dish, greased
  • 1 pkg of cornbread mix (for an 8×8 dish)
  • 4 hard-boiled egg whites
  • 2 cloves of garlic, finely chopped
  • ½ red onion, finely chopped
  • 1 green pepper, chopped
  • 1 tomato, cubed and drained
  • ½ bushel of cilantro, finely chopped
  • ¼ tsp cayenne pepper
  • ½ can black beans, rinsed & drained
  • 2 small forkfuls of canned diced jalapenos

what to do

  1. Start hard-boiling 4 eggs
  2. Preheat oven to 400F
  3. Sautee in olive-oiled pan: garlic, onion, green pepper, and cayenne until onions become translucent
  4. Add cilantro, lime zest, and juice from whole lime
  5. Chop up hard boiled egg whites and add to pan
  6. Add tomato, beans, and jalapeno
  7. Simmer until liquid is gone
  8. Mix up cornbread mix
  9. Add 1/3 of the batter to the bottom of the baking dish
  10. Add the entire pan of vegetables to the dish
  11. Top with the remaining 2/3 of the cornbread mix
  12. Place in oven at 400F for 35 min (high altitude)
